I just got a new 2011 Jetta TDI SportWagen; very nice. Is there a way to disable the seat belt warning when a dog sits on the passenger seat?

Make the dog wear a seat belt? :nana2:

I disabled mine though I do drive with the belt on.

You are lucky with VW a friend of mine had a Toyota Avensis and with just her handbag on the passenger seat the seat belt warning went off (god knows what women carry in their handbags) if she didn't fasten the belt the engune would stop which can't be a good safety feature?

For safety's sake I'd just clip the belt in behind the dog when he's there.
X2...this is what I usually do when I drive around with my dog(s) in my truck...one of them always makes their way to the passenger front seat, so I fasten the seat belt. Also, many of the travel dog harnesses use the seatbelt to secure the dog through a loop in the back and then the seat belt it fastened.
