I've noticed that once in a while, the throttle pedal is slow to respond, could this be due to a bad ESP? It's not turbo lag, the car doesn't want to accelerate for a split second and then it's fine.

Can you give more symptoms? Does it happen when you are trying to accelerate on the highway or going up a steep hill? Try going to autozone or your local parts store, they can read your obd2 codes for free. It is possible that there may be something wrong with the traction control.

Sorry, will do, no, it's more like while I am cornering, this is why I think it might be ESP.

There could be a problem with the throttle pedal, the wiring, or the ECU. Or some other mechanical or engine related issue.
