Hi, I'm new to all of this but I just purchased a 2000 Jetta TDI and I need to know where on the dipstick the oil level should be. Thanks!

There are 2 marks at the bottom. It should be between those 2 marks.

dipstick clarification

So anywhere within the 1/2" 'dip' in the dipstick is fine?

That's right, make sure you use synthetic oil for diesel engines and it will last you a long time, it's more expensive but oil changes are 10,000 miles. There's an oil change article in the how tos here.
And don't change oil too often, it really does nothing since diesel oil is formulated for long life!
