This should answer some questions about what a DSG is, how it works, common problem areas. See the article here:

Many people new to VWs might see this spec listed in the buyer's guide for the 2009 Jetta TDI and wonder what a DSG is. This explains it. I haven't owned a DSG car and like anything else it takes getting used to.

It also looks like enough DSG drivers people report that mileage is a few mpg down compared to a conventional manual. The difference in fuel cost is only $12-20 a month but you do lose out on hypermiler bragging rights!

I'm sure that you could rig it up. If you could switch a GLI steering wheel and it's paddle shifters, that would be a OEM-like solution. And if it didn't work, I don't see why you couldn't tap into the wiring harness if it wasn't even just plug-play.

EDIT: yes, it's just plug-play, if you google it, all you need is a GLI/GTI steering wheel and then it's plug play, no mods required except a Vag-Com are needed.
