Well you can't get the newer service manuals for another 3 years so I bought VW Golf & Jetta Petrol & Diesel (04 - 07) 53 to 07 which should cover your model. Haynes do an online service if you want to order one but I don't know how much difference there is between UK and US models?

Haynes Online USA VW Manuals but they don't show a 2005 Jetta?

Bentley publishers. I bought one a couple of weeks ago in hardback from amazon.com. Reasonable price and covers all MKV (2005.5-2010).
